This Italian meat stew slow cooker recipe or what mom may have called it Italian crock pot stew recipes, may be the best beef stew recipe.
Italian beef stew thrown together in the morning or the night before, set on low before leaving for work and nothing beats coming home to the smell of your favorite stew beef recipes.
Beef from the chuck or shoulder makes the best beef stew. We recommend purchasing a blade roast or cross rib roast (shoulder arm roast) and cutting into 1 inch cubes. If your grocery store has sirloin tip roast or bottom round roast ( outside round roast) on sale, you can buy one of these roast and cut it up for stew as a second choice. They are a decent roast for a stew, just a little dryer than a chuck roast.

Ingredients
- 2 tablespoons olive oil
- 3 garlic cloves minced or 1-2 teaspoons jarred minced garlic
- 3-4 pound boneless chuck (blade) cut into 1 inch cubes
- 2-3 onions chopped
- 2 teaspoons sugar
- 1 tablespoon dried rosemary
- 1/2 cup red wine
- 1 32 ounce can crushed tomatoes with juice
- 1 teaspoon salt
- 1/2 teaspoon black pepper

Slow Cooker Recipe
- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef and brown on all sides, about 6-8 minutes in total. Brown beef in 2 batches if necessary. Transfer the beef to the slow cooker insert.
- Add another tablespoon of olive oil to the same skillet over medium-high heat. Add onion, garlic, rosemary and sugar to the skillet and saute until the onions begin to soften, about 4-6 minutes. Transfer to the slow cooker insert.
- Add the wine, crushed tomatoes with juice, salt and pepper to the slow cooker and stir to distribute evenly.
- Cover and cook on low 9-11 hours or on high 5-6 hours.
- Season to taste with salt and pepper and serve over rice, pasta or mashed potatoes.

Slow Cooker Tips
- For large roast or families of more than 4 we recommend a large oval slow cooker of 6 quarts of more.
- Never fill the slow cooker more than 2/3 full, meat produces moisture and can cause the liquid to rise over or near the top.
- Given the choice cook on low setting, food cooked on low are more tender and moist after the longer cooking time.
- Brown and sear meat on all sides before adding to the slow cooker, this will help to seal in the juices for maximum tenderness.
- Keep the lid on, slow cookers can lose up to 30 minutes of cooking time with the lid off.
- Defrost food before adding to slow cooker.
- Ingredients cut to the same size will cook more evenly.
- Use dried spices and herbs for long, slow simmers, add fresh herbs near the end of cooking.
- Dense foods take longer to cook, place denser food at the bottom where the temperature is a little hotter.
