Beef Stew Crock Pot Recipe
Beef from the chuck or shoulder are the least tender of all cuts when cooked for a short time, but when cooked with a moist slow simmering heat all day, chuck meat will have the most flavor, tenderness and juiciness for any crockpot stew recipes.
You can buy stew already cut at your local meat department or butcher shop, but quite often the stew may be cut from the hip, not a terrible cut for stew but cuts from the hip just won't have the tenderness and flavor as cuts from the chuck will deliver. So unless you know for sure the stew is from the chuck, we recommend buying a blade roast or a cross rib roast(shoulder arm) and cutting it yourself into 1 inch cubes.
This beef stew crock pot recipe calls for beef broth, but beef broth can be substituted with chicken broth, wine, beer, stock, water or any combination of these liquids.

Beef Stew Crock Pot Recipe
Ingredients
- 3 tablespoons olive oil
- 2-3 onions, chopped
- 5-6 medium red potatoes, cut into 1 inch cubes
- 3-4 pounds boneless chuck (blade), cut into 1 inch cubes
- 4-6 carrots, peeled, cut into pieces
- 4-6 garlic cloves minced or 2-3 teaspoons jarred minced garlic
- 3 cups beef broth
- 2 teaspoons dried thyme leaves
- 1/2 cup all purpose flour
- 2 bay leaves
- 2 cups frozen peas
- 2 cups frozen corn, opitional
- 1 teaspoon salt
- 1/2 teaspoon peppper
Cooking Instructions

- Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the beef and brown on all sides, about 6-8 minutes. Transfer the meat to the crock pot insert.
- Heat 2 more tablespoons of oil over medium-high heat in the same skillet. Add onion, garlic and thyme and cook until onions are softened and browned, about 6-8 minutes. Stir in flour and cook 1 minute, and then slowly add half the beef broth, stirring and scraping any brown bits. Transfer to the crock pot insert.
- Add the potatoes, carrots, bay leaves,salt, pepper and remainder of the beef broth to the slow cooker and stir to distribute the spices evenly.
- Cover and cook on low 9-11 hours or 5-6 hours on high until the meat is tender. Add peas and corn the last 30 minutes. Season with salt and pepper to taste before serving.

Crock Pot Tips
- For large roast or families of more than 4 we recommend a large oval crock pot of 6 quarts of more.
- Never fill the crock pot more than 2/3 full, meat produces moisture and can cause the liquid to rise over or near the top.
- Given the choice cook on low setting, food cooked on low are more tender and moist after the longer cooking time.
- Brown and sear meat on all sides before adding to the crock pot, this will help to seal in the juices for maximum tenderness.
- Keep the lid on, crock pots can lose up to 30 minutes of cooking time with the lid off.
- Defrost food before adding to crock pot.
- Ingredients cut to the same size will cook more evenly.
- Use dried spices and herbs for long, slow simmers, add fresh herbs near the end of cooking.
- Dense foods take longer to cook, place denser food at the bottom where the temperature is a little hotter.
